Only the Wwine from the first press, the cuvee, is extracted and used in creating this exceptional spirit, which is a sure guarantee of finesse. Only 5% of the Wine is used and aged for four months in new oak barrels, which enhances the intense qualities and complexities of the final blend of Champagne. Only after patient slow ageing for a period of ten years in the Saint-Nicaise chalk pits, the cuvee of exceptional quality comes out into the light.
This pale yellow Champagne with light abundant bubbles rises steadily to the top for the mousse. The pure bouquet opens with a contrast between a well developed intensity and finesse that reveals aromas of pears, greengages and white flowers. After a short period of time, the intensity presents the aromatic richness and maturity of a wine that is already expressing massive potential.
On the palate this bubbly Champagne gives a lively, direct, precise attack and is dominated by flavours of candied lemon, zest and fresh pineapple. The mid palate is fresh and balanced. The overall impression is of generosity, voluptuousness and volume, highlighted by characteristics of grapefruit and citrus notes. The finish of this marvellous Champagne is long, lingering and complex.
